For a treat we had pumpkin chocolate chip cookies because my DS9 likes them.

Ingredients:
1 can (15 ounces) fat-free vegetarian chili
1 carton (15 ounces) reduced-fat ricotta cheese
1 cup (4 ounces) shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies
1 teaspoon taco seasoning
1/4 teaspoon salt
8 lasagna noodles, cooked and drained
1 jar (16 ounces) salsa
Directions:
In a large bowl, combine the first six ingredients. Spread about 1/2 cup on each noodle; carefully roll up. Place seam side down in a 13-in. x 9-in. x 2-in. baking dish coated with cooking spray.
Cover and bake at 350° for 25 minutes. Uncover; top with salsa. Bake 10 minutes longer or until heated through. Yield: 8 servings.

Behold at the time of harvest, the ears of corn did bring forth kernels which were dried and prepared for the Popper’s hand. And then it was that the Popper did take the kernels, all that did appear alike unto Him, and applied the oil and the heat.And it came to pass that when the heat was on, some did explode with promise and did magnify themselves an hundred fold. But those which kept of the warmth and did not bring forth were only cast into the pail and thought of with hardness and disgust.And thus we see that in the beginning all appear alike, but when the heat is on, some come forth and give all, while others fail their purpose and become as chaff, so as to be discarded and forgotten. Last week we found a really good deal on peaches so we bought quite a few. I was able to can 6 quarts and 10 pints. It really didn’t take too long once I got going. I saved some to make peach butter with but it didn’t work. If anyone has good recipe for peach butter, apple butter or pear butter, I’d really like to try them.

DD6 had a bunk bed with a futon underneath. DD2 needed a bed also so we got a new bunkbed. It has given them both so much more room to play. Both girls seem happy with it so Mom is happy.

School starts tomorrow so we had this lesson today. We talked about what to do if we see someone on or near the school that should not be there or who looks like they should not be there. It’s better to be safe than sorry. We talked about always using the buddy system to walk home. We talked about passwords in case someone else needs to pick them up. We talked about obeying the traffic laws and waiting for the crossing guard to tell you its okay to cross. We also reviewed what to do if they are home alone. Always answer the phone. If they ask for Mom or Dad say they are busy. Don’t tell them you are home alone. Don’t answer the door. Etc.
We did some role playing and then had refreshments-cookies in the shape of traffic signs.

Friday night we went to a party at the inlaws. Unfortunately, it was cancelled but no one told us. We took home 1 and one-half boxes of apricots. So Saturday was spent canning apricots. I was able to put up 12 bottles of apricot juice.

We went to a discount store on Saturday. We were hoping to get cereal and I think thats the only thing we didn’t get. They had a 40 pound box for $11.00 dollars. My children love bananas so I thought that would be okay. Many of the bananas were ripe with a few quickly passing the point were they would be good for eating. Figuring I could use them for banana bread later, I froze most of them. Today, I’m using the ones I didn’t freeze to make banana bread, banana cookies, banana muffins and banana cream pie. Forty pounds is a lot of banana.
